The Perfect Cozy Meal: Vegan Whiskey-Chai Jackfruit & Farro Stuffed Acorn Squash

Enjoy this perfect easy, cozy and healthy dish for any night of the week! We've partnered up with Chef Liz from Santosha Nutrition to bring you Whiskey-Chai Jackfruit & Farro Stuffed Acorn Squash. Personalize the dish by using vegan or dairy cheese, bumping up the spice level with red pepper flakes, or mixing up the whiskey for entirely new flavors. 

Serves 4 

Ingredients 

  • 2 acorn squash 
  • 2 ½ cup water 
  • 1 chai tea bag 
  • 3 sprigs thyme 
  • 2 oz whiskey* 
  • 1 package Jali Fruit Co. Dried Jackfruit
  • 1 cup farro 
  • 2 tsp garlic, minced 
  • 1 tsp ginger, minced 
  • 1 tsp vegan butter 
  • 1 tsp olive oil 
  • salt & pepper 
  • 1 small red onion, diced 
  • 1 cup swiss chard, chopped 
  • 1 tsp ground flax 
  • pinch of red pepper flakes (optional) 
  • vegan parmesan (optional) 

Garnish 

  • dill or parsley, finely chopped 
  • orange zest 

Directions

Preheat the oven to 350F and prepare a baking sheet. Cut acorn squash in half and slice the rounded bottoms to create a flat base for each half. Remove the seeds* to form a bowl and rub with oil then season with salt and pepper. Cook squash halves, cut-side down, for 20 minutes or until the sweet flesh can be easily pierced with a fork. 

In a saucepan, boil 2 cups of water, chai tea bag, sprigs of thyme, and whiskey. Add Jali Fruit Co. Dried Jackfruit and simmer for 30 minutes. Remove re-hydrated jackfruit and reserve liquid to use later. Add farro, garlic, ginger, a pinch of salt, 1 cup of reserved liquid and 1 cup of water to a sauce pan and bring to a boil. Lower heat and simmer for 20 minutes or until the farro is done. 

Heat 1 teaspoon of olive oil in a skillet and saute red onion for 2 minutes -- then remove from heat. Add Swiss chard, cover pan and let sit for 3 minutes. Add farro, ground flax, and red pepper flakes to the onion mixture and stir to combine -- season with salt and pepper to taste. 

Fill cooked acorn squash halves with jackfruit and farro mixture and top with vegan parmesan if using. Bake for 10 minutes and garnish with chopped dill and orange zest before serving. 

Expert tips: Choose bourbon whiskey for a sweeter flavor!

*If you’re looking for the perfect healthy snack, wash and dry the acorn squash seeds and roast with some olive oil, salt and pepper.
